    More than S'mores III

    Chef John is back again with another yummy installment - this is one that I would definitely try - This is his campfire recipe for meatloaf (with a spin).  Chef John writes:

    "This is one of my favorite foods to make while camping or even at home because there are endless variations and it can be cooked on any type grill or even over a campfire using a grate. I have made this countless times and never exactly the same. It always turns out great and makes great leftovers ( meatloaf sandwiches ). Here is a version I really like. Feel free to experiment.


    2-3 lbs. 99% ground turkey ( or any other lean ground meat or combination  …I’ve used turkey, beef, chicken, pork, veal, buffalo.

    1 lb. Jimmy Dean hot breakfast sausage ( or your favorite breakfast sausage )

    1 egg

    1 cup plain breadcrumbs ( or crushed crackers )

    ½ cup Chopped onions ( optional )


    I sometimes add a little seasoning but it’s not necessary because the seasonings in the breakfast sausage gives it great flavor.


    Mix all the ground meat, add the egg and the breadcrumbs ( & onions & seasoning ), mix thoroughly and put in a meatloaf or bread pan and cover with foil. Cook on low-medium indirect heat on a charcoal or gas grill or put on a fire-pit grate away from the hottest part of the fire. Cook until done 1-2 hours ( temp should be 160 ).


    Here are some of my favorite variations I have tried.


    Lining the bottom of the meatloaf pan with sliced jalapenos.

    Putting cheese in the middle of the loaf

    Topping the meatloaf with strips of bacon

    Adding my favorite bbq sauce to the top of the meatloaf the 30-40 minutes before its done. "
